Vegan Protein Ice Cream Sandwiches

For the biscuits, you will need:

  • 8 soaked dates
  • ½ cup of soaked almonds
  • 2 tablespoons of unsweetened shred coconut
  • 2 tablespoons of ground flaxseeds
  • 2/3 cup of oat flour
  • 2 tablespoon of coconut oil
  • 2 tablespoon dairy free milk (almond, soya, etc.)


For the ice-cream, you will need:

  • 2 ripe and frozen bananas
  • ½ of an avocado
  • 4 tablespoons of coconut cream
  • ½ scoop (30grams) of VFuel’s Vegan Balance



Step 1) Add the biscuits ingredients to a blender and blend until course chunks are formed.


Step 2) Take the mixture, form it into a ball, and place the ball on a large piece of parchment paper. Cover the ball with another piece of parchment paper and then proceed to roll the dough out into a square or rectangle that is about ½ a centimetre thick.


Step 3) Score the dough with a knife into even squares and leave them to harden in the freezer.


Step 4) Put all of the ice-cream ingredients into a blender and blend until everything is incorporated into the mixture, and it has the consistency of soft-serve ice-cream. Don’t forget to have cheeky lick of the bowl after.


Step 5) Place the soft-serve ice-cream on your frozen biscuits before placing the second half of the biscuits.


Step 6) Put them back in the freezer until they solidify and then remember to leave them out to thaw for 3 minutes before consuming!
