Vegan Protein Squares
What you need:
1 cup almonds
1/2 cup gluten-free quick oats
1 1/2 scoops (45g) Vegan Lean protein powder
1/4 cup + 2 Medjool dates (pitted and packed)
1/4 cup water (coconut with pulp or non-dairy milk works too)
1 tablespoon maple syrup
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1/4 teaspoon cinnamon
Step 1) Place all of the ingredients into a food processor and run until a dough forms, adding more coconut water a tablespoon at a time as needed (the dough should stay together when you press it between your fingers).
Step 2) Scoop the dough into a tablespoon-sized ball, being sure to press it tightly to help it stay together. Step 3) Continue until all of the dough has been rolled into balls.
